I had the opportunity to listen to a NPR show on how eating less beef leads to helping the environment. They talk about how the meat industry makes up ¼ of emissions globally. Methane and CO2 are the results of farming beef. This show talks about how people eating so much meat is leading to the meat industry booming and continuing to harm the environment. They talk about how if people cut their meat intake by half, there would be enough food to feed 10 billion people by 2050, which is what the estimates are showing. Just the switch even to chicken or fish instead of beef one night a week has an impact. Vegetarians also seem to work for some people, but you have to be conscious that the dairy industry is just as harmful. The main point of this talk was that you don’t have to cut out beef entirely, but considering that beef is the most resource intensive and produces the most GHGs, switching to more plants and carbon friendly meats. They also listed some good recipes:

  • Stir Fry
  • Vegetable Pot Pie
  • Vegetable Quiche
